The Weber 721000 is the updated version of the Weber 2820, and is billed as the best possible way to get the true smokehouse flavor. It is heavy duty and durable, and strongly constructed of porcelain enameled premium grade steel, which is also the material for the really large water pan. One of the smoker’s outstanding features is the amount of internal space, with two nickel lined cooking areas each with enough room for a large turkey.

This model features a number of improvements on the earlier model, one of which is a much wider door, making it a lot easier to insert wood chunks and extra charcoal. The door latch too is now spring loaded, meaning it is a lot easier to check that the door is closed. Other improved features include the greatly increased water pan capacity, and the built-in thermometer. This product performs at least as well as the 2820, but has many enhanced features for easier use.

This updated version of a popular product has received rave reviews from well over 100 people, suggesting that it is even more popular than its predecessor. One reviewer commented that as he had given the earlier product 5 stars, he should really give this one 6, while another said he would give it 20 stars if he could. Apart from the many improvements on the earlier model, such as the bigger door, more capacious water pan and – most welcome of all – the thermometer, one feature they really love is the ease of assembly. One called it a snap, while another reported that his 10-year-old had assembled it for him. The other feature of the smoker that is praised by several reviewers is the way it holds a consistent heat. One said his model had held a 250 degree temperature for 16 hours without his having to add any additional fuel. Several users also wished to point out that the product does come with a cover, despite Amazon trying to sell an extra cover with it, but it does need a Weber charcoal chimney.
Two problems were identified by users. One was that the water pan at 8 inches deep goes down too far, so that you cannot see the charcoal behind it to check if it need replenishing. The reviewer felt this was a design flaw, as it would have been quite easy to create a flat-bottomed pan. The other problem was that there were no handles on the sides of the body, so that it is difficult to lift the body out to add extra charcoal for a long smoke.
